Undenatured proteins represent a concentrated source of bioavailable cysteine, a precursor and conditioning nutrient for glutathione synthesis, whose cellular concentration is reduced in conditions of protein deficiency. As glutathione is involved in protein synthesis, a greater intake of its precursor is particularly appropriate in the dietary management of sarcopenia.
